Biography

Akanksha Mahanti is pursuing a master’s degree in strategic design and management at Parsons School of Design. As an international student in New York City, Akanksha experienced firsthand how quickly expenses can add up, and the school pantry became a meaningful source of support. This experience strengthened her understanding of the critical role food access plays in student and community well-being, motivating her to become more actively involved in advancing food security initiatives.

With a background in strategic design, Akanksha is passionate about combining food systems and design to develop more thoughtful, human-centered initiatives that create real, measurable impact. She brings experience conducting on-the-ground research in unfamiliar and complex contexts, allowing her to contribute valuable insights rooted in lived experience and user centered inquiry.

Outside of her work and studies, Akanksha enjoys traveling, doodling, and experimenting with new recipes.
